Saffron is one of the world’s most valuable and versatile ingredients, used across food, cosmetics, and pharmaceuticals. Yet about 80% of global production comes from a single region, making supply sensitive to climate pressure, unpredictable weather, and environmental variability. As a result, availability and quality can fluctuate even as global demand continues to rise.EATS uses regenerative, soil-like substrates that support clean and predictable saffron cultivation indoors — independent of climate, season, or geography. This makes saffron an ideal first crop for our system and a strong foundation for early commercial pilots.
